Cilantro Salad

A simple side dish for all you cilantro lovers, and an unusual way to serve it as a vegetable!

1 bunch fresh cilantro
2 tsp rice wine vinegar
1 pinch sugar
1 pinch salt
1 clove garlic, minced
1 tsp chopped salted chilies (optional)
1/2 tsp sesame oil

Wash the cilantro and shake it dry.
Cut the bunch, stalks and all, into 2″ sections.
At this point you can blanch in boiling water and shock in ice water if you prefer, or just leave it raw – we prefer the latter.
Combine the dressing ingredients, toss with the cilantro and serve immediately.

do ahead:
The dressing can be prepared up to a day in advance. Do not mix with cilantro until just before serving.
